Beat The Heat With Fun Popsicles!

One way to cool off this summer is to make some fun and tasty popsicles. I know my 16 month old loves a cold, tasty popsicle. She loves all the different flavors, shapes, and with her teething, makes her gums feel fantastic. Plus after playing outside in this heat, who doesn’t enjoy something cool to eat? Here are a few simple recipes to try with your kiddos to beat the heat. I also attached below some links for some fun popsicle molds. The kiddos will never get bored with these fun shapes.

Blueberry Coconut  – 1.5 cups coconut milk, 2 tbsp maple syrup or agave, 1 tsp vanilla extract, 1 cup blueberries (fresh or frozen) 1. Blend first three ingredients until smooth 2. Add blueberries and pulse until mixed well but not completely blended 3. Pour in mold and freeze for at least 5 hours or overnight. This recipe is dairy and nut free for any littles with allergies.

Peanut Butter and Banana – 3 bananas, 1/2 cup creamy peanut butter, 1 cup plain yogurt, 2 tbsp honey (optional – adjust amount to your preference) 1.Place everything in food processor except honey and blend until smooth 2. Add honey according to taste 3. Pour into molds and freeze overnight. Feel free to use your favorite brand of yogurt or switch to sunbutter for peanut allergies. 

Strawberry Coconut Water – 16.9 ounce coconut water, 2 cups strawberries, 2 tbsp agave 1. Put all ingredients in blender and mix until smooth 2. Pour in molds and freeze for 4-6 hours. This is a great way to get electrolytes back in after a day in the heat. Great substitute for those sugary drinks.

Strawberry Daiquiri Boozesicle -5 cups frozen strawberries, 1 cup rum, 1 cup lemonade, 1/3 cup lime juice. 1) Blend all ingredients in blender until smooth 2.Pour into molds or pouches and freeze for 4 hours or until frozen.

Mango Moijito Boozesicle – 1.5 cup chopped mango, 1 oz. rum, 1 lime, 2 tbsp sugar, 2 tsp chopped mint, 1/2 cup water 1. Blend everything except mint until smooth 2. Add mint and pulse until mint is blended into mixture but you still see specks of mint 3. Pour into molds and put in freezer until frozen.
